Fruit Crepe Recipe

It's been exactly ten days since I gave birth to our little angel, Euri. The sacrifices of limited sweets, carbs and weekly getaways are all worth it. To celebrate our little angel's tenth day (and the end of my gestational diabetes), I cooked my favorite peach-mango crepe!

Since I'm feeling generous today (as if crepe recipes aren't in any websites yet), here is my easy crepe recipe.

Crepe:
  • 2 eggs
  • 1/2 cup water
  • 3/4 cup milk
  • 1 cup flour
  • 2-3 tbsp melted butter
  • 1 tsp vanilla extract
Filling and toppings:
  • Fresh fruit (peach, mango, strawberries, blueberries, etc)
  • All purpose cream / Whipped cream
  • Chocolate syrup
  • Flavored gelatin (optional)
  • Marshmallows, candy sprinkles, corn flakes etc.
Directions:
  1. Combine all ingredients in a bowl. Make sure you mix the ingredients well (it has to be smooth, without bubbles).
  2. Heat your non-stick pan and add butter to coat.
  3. Pour your crepe batter into the center of the pan, spread it evenly (your crepe has to be thin). Cook for at least half a minute (low heat), flip and cook for another 10-20 seconds.
  4. Remove from heat and let cool for at least 30 minutes.
  5. Fill your crepe with your favorite fruit (peach, mango, strawberries, blueberries, etc).
  6. Add all purpose cream/whipped cream, chocolate syrup, gelatin.
  7. Top your crepe with whipped cream, fruit and chocolate syrup.
  8. ENJOY!
